How to Brew Coffee

Drip Coffee Brewing

To brew your Rockin' Cat Organic Coffee in a drip brewer…

- freshly grind 55 grams of coffee for every 1 liter of brewing water

- use purified water and brew at 93ºC, if possible

- pre-wet the paper filter with hot water

- add your ground coffee (setting 18 -medium- on Baratza Encore)

- brew and enjoy your coffee

Pour Over Coffee Brewing (V60 Method)

Start with your kettle, grinder, scale, range server (or mug), coffee dripper, and paper filter, then…

- heat purified water to 93ºC

- measure 20 g of Rockin' Cat Organic Coffee and grind to a medium-fine consistency (setting 15 on Baratza Encore and setting 3.3 on Fellow Ode — settings may vary slightly between different coffees, but these estimates are a great place to start)

- insert unfolded filter in dripper; place dripper on range server / mug; pre-wet filter with roughly 60 ml of 93ºC water; discard pre-wetting water (suggestion: if you are brewing your pour-over into a ranger server or serving carafe, discard the pre-wetting water into the mug(s) the coffee will later be served in to pre-heat them)

- place 20 g of ground Rockin' Cat Organic Coffee in the bottom of the pre-wet filter, evenly, without allowing grinds to have a dip or hump

- pour ~3x the amount of water to the amount of ground coffee (in this case ~60 ml) of 93ºC purified water over the grounds, slowly moving the kettle spout in a circular motion over the grounds, while maintaining a consistent height over the grounds (don't bounce up and down with with the kettle -- keep the spout level)

- allow the grounds to bloom for about 30-40 seconds, as the water drains into the range server / mug

- continue to pour the remaining ~240 ml of 93ºC purified water over the grounds for between 2 to 3 minutes, without over filling the dripper more than half way

- after the water has drained from the dripper, remove and compost the filter containing the grounds

- enjoy your coffee

AeroPress Coffee Brewing

Prepare the AeroPress for brewing…

- pull the plunger piece out of the piston

- detach the filter holder

- add a new paper filter (no need to rinse the filter paper, just place it in dry)

- reassemble the base and place it on top of the cup, carafe, or container you’ll be brewing into (it is recommended that you place your AeroPress on a scale with a timer for accurate and consistent brewing)

(whatever container you are brewing into must be fairly sturdy because you will be applying pressure to the top of the AeroPress during brewing)

- Weigh out your Rockin' Cat Organic Coffee:
11 g to 200 ml water (or 55 grams:1 liter is recommended for light to medium roasts)
12-13 g to 200 ml water (or 60-65 grams:1 liter is recommended for darker roasts)

- grind to a fine setting - finer than standard pour over, but not quite as fine as espresso

- load the ground coffee into the AeroPress

- with lighter roasts you can brew with near boiling water (91°C - 95°C), with darker roasts use around 90°C water or slightly lower temperature water

- start your timer and begin pouring 200 g of water, evenly saturating the coffee as quickly as possible

- gently place the plunger on top so it stands straight on its own (do not press down yet) and remove the AeroPress and the container you’re brewing into off of the scale (applying pressure directly to the scale could cause damage)

- wait for 2 minutes

- at 2 minutes — holding the piston and the brewing container — gently swirl the entire setup to knock the ground coffee that has formed a crust down so it starts to sink to the bottom

- wait about 30 seconds

- with the palm of your hand, begin to press the top of the plunger, applying pressure gently and evenly with your body away from the AeroPress (don’t lean into it)

- Press until all of the liquid has been extracted into the cup - about 30 seconds

- Rinse and clean the brewing gear for next time

- enjoy your coffee

French Press Coffee Brewing

To brew about 300 ml of coffee in your French Press...

- begin with clean equipment

- preheat your French Press with hot water; discard the water 

- add 15 g of medium-course ground Rockin' Cat Organic Coffee to the pot

- start the timer and begin pouring 300 ml of 93ºC hot water into the pot — saturate the coffee completely without pressing down on the plunger — place the lid on the pot 

- after 2 minutes, remove the lid and gently stir the coffee to further saturate all of the grounds

- pour the remaining 50 grams of hot water into the pot 

- using two spoons, skim the oils and remaining floating grounds off the top of the brew (this will produce a cleaner cup & will stop the coffee from extracting) 

- without pressing down on the plunger, replace the lid 

- at 4 minutes, slowly press down on the plunger until it is at the bottom of the pot 

- decant and enjoy your coffee
